PECAN PEANUT-BUTTER BANANA BREAD
Makes 2 small loaves.
1 cup sifted all-purpose flour
1 cup whole-wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
3/4 stick unsalted butter
1/2 cup smooth peanut butter
1 cup dark brown sugar
2 eggs
2 to 3 large bananas (1 cup)
1-1/2 cups pecan halves, toasted
To prepare oven, pans: Adjust rack one-third up from bottom of oven. Preheat oven to 375 degrees. Butter 2 (8-by-4-by-2-inch) pans. Dust with wheat germ or dry bread crumbs. Set aside.
To make bread: In medium bowl, sift together all-purpose flour, whole-wheat flour, baking soda, salt and nutmeg. In large bowl of electric mixer, beat butter until softened. Add peanut butter. Beat to mix. Beat in sugar. Beat in eggs, 1 at a time. Coarsely mash bananas. Add to bowl. With mixer on low speed, slowly add sifted dry ingredients. Beat only until incorporated.
