Questions and Answers about Cake Pan baking times

How to convert pound cake baking time from 10" tube pan to two 9" round pans?

Question: I am making pound cake but I want a layer cake, not the tube pan or "angel food cake pan" style. The recipe calls for me to bake the cake for 1 hour and 20 minutes at 325 degrees F, but that's for the tube pan. What should I do for my two 9" round pans?

Answer: Bake for 30 minutes then do the toothpick check. When toothpick comes out clean and batter free the cake done. Check often after 30 minutes - should be golden brown on top.

The round pans will need a bit less cooking time - probably 20 minutes less.and just bake an hour.

Mandarin & Almond Cakes | TLT - The Little Things

Ingredients

4 mandarins (about 380 gr. total) (or use clementines or oranges instead) 6 eggs 1 cup + 1 tablespoon (+/-220 gr.) sugar 1 cup (+/- 100 gr.) ground almonds 1 1/4 cup (+/-150 gr.) regular flour 1 big teaspoon baking powder 4 small cake pans (I used 5,5’’/14 cm) butter, for greasing

Instructions

Put the mandarins with cold water in a pan. Bring to a boil and cook for 2 hours on low heat. Drain and cool. Preheat oven to 380F (190C). Butter the cake tins. Place whole mandarins (yes! with skin and piths) in a food processor and blitz until they are pureed. Add other ingredients and mix well. Pour batter in prepared cake pans and bake for 40-50 minutes. The cakes are done when a skewer comes out clean. You may need to cover the cakes with foil after a while to prevent burning. Let cool. Remove from cake pans and enjoy.
