Ditalini Pasta and Vegetable Soup
2 tablespoons olive oil
1 medium onion, chopped
1 cup carrots, sliced 1/4-inch thick
1 cup celery, sliced 1/4-inch thick
2 medium potatoes, diced
1 clove garlic, chopped
3 (14-ounce-each) cans chicken broth
1 cup fresh green beans, cut in small pieces
1 cup yellow squash, cut in small cubes
1 cup cooked ditalini pasta
1 (14-1/2-ounce) can diced tomatoes with spices
1 medium-size can white kidney beans, rinsed and drained
In a large soup pot, heat oil and add onion, carrots, celery and potatoes. Cook, stirring occasionally, for 10 minutes. Add garlic. Add chicken broth plus water to equal 6 cups and bring to boil. Add green beans and squash; cook 12 minutes. Add cooked pasta, tomatoes and beans; slowly cook 8 to 10 minutes. Yield: 6 servings.
