White: Hummingbird icing on the cake in New Orleans

I ate like a queen when I spent five days in New Orleans in early December. I came to the Big Easy to watch my granddaughter dance during the Regional Irish Dance competition. She is a gorgeous young woman and she qualified for Worlds, which will take place in Boston in March 2013.

Of course, she was in my heart and mind, but there was time enough to eat royally, at Donald Link's Herbsaint and, twice, at Borgne, the latest of John Besh's restaurants. It is right off the lobby of the Hyatt Regency, where I stayed. (This was simply the most palatial hotel I'd ever visited; I had gone onto Orbitz on the Internet and looked for a hotel that was reasonable, near the Marriott, where Lily was dancing, and looked safe. How I was able to get this room in that hotel for less than $130 per night is still a mystery to me.)

At Borgne what I ate was mostly catches from the sea. Oysters, crab and flounder, oh my. A grilled romaine salad with white anchovies, slices of a Spanish cheese called Idiazabal and "chips" of ham so thin you could see light through them.

Playing with Flour: Almost fudge gâteau for a gathering

This is one of those basic, pure chocolate desserts.  Kind of like a little black dress, it's relatively simple but timeless.  When it comes to this gâteau, or cake, think flourless chocolate cake  but with more structure since there is a modest amount of flour in the recipe.  It doesn't look like much - pretty rustic, in fact, with its sunken middle, but it is that wonderful kind of one-layer/no frosting kind of cake that I love to make and enjoy. You could make a chocolate glaze for this cake but I opted out of that.  Without the glaze, it's not quite as decadent but a nice simple weekend afternoon treat.  Some of us enjoyed it with a scoop of ice cream but I thought it was nice all on its own.  The young boys in our family (my son and two of his cousins) wanted the cake with chocolate This is a pretty simple recipe you mix by hand - the process is sort of meditative and I really enjoy it....

Its label isn’t peeling because he wants to peel it himself. Wants to feel the intense satisfaction of ripping it slowly, wholly from its glue. Clinging for dear life, he’ll coax it away. Ensuring no rips, no tears. It’ll come off in one piece and he’ll slap it onto the wall, he thinks. To remember, he thinks. For who knows how long. I’m going to surprise him, she thinks. At my kitchen counter, I’m going to mix up a batter. A rich, luscious, chocolate-brown batter. A celebration of the last stout, of the special day. I’m going to make it last longer this way. Otherwise, he’ll just drink it all in one go. A beer is not a meal. A cake to memorialize the last stout (for who knows how long!). A wonderful surprise, she thinks. Despite the man’s disappointment in this story, this chocolate stout cake is amazing (although, of course, nothing beats a nice glass of stout). The cake is rich without being overly sweet and the frosting is the perfect topper: light, creamy and generously applied. Serve this cake with stout if you have it and with very strong coffee if you don’t....
