cake pan with lid customized?

Question: I have a friend who got a metal cake/brownie pan with a metal lid that had been "engraved" (idk if that's the right term for what I'm describing) it was a series of holes punched through the metal which resulted in a design and it was customized with her last name.


Answer: I've seen these advertised in some catalogs, but haven't noticed them this year. I've seen them personalized, but didn't realize the name was actually punched all the way through the lid.

QUESTION: When baking with gray baking pans, do you need to adjust the baking time or temperature? -- Sister Margaret Urban, Dearborn

ANSWER: In many cases, both the time and temperature need adjusting depending on the color and material of baking pans. Baking pans are made of several different materials: glass, aluminum, stainless and ceramic. All these different materials conduct and distribute heat differently.

At www.calaphon.com , the company says its medium-gray loaf pan "gives baked goods a golden-brown color while protecting them from over browning."

So, generally, the lighter pan colors do not require that the temperature and time be adjusted.

With darker pans, you should lower the temperature by 25 degrees. You may need to adjust the time, but it can vary.

What happens with darker pans is that the exterior of what you're baking (cakes, cupcakes) can brown quickly and the inside won't be done. Using a cake tester inserted in the center is the best way to check.
