Candy making humidity....?

Question: What should the humidity be when making candy?? What should the temperature be also? Mostly this is pertaining to making peanut brittle.


Answer: The humidity should be low, the temp outside? I don't think matters, peanut brittle is pretty fool proof, here's a site I found helpful....

Many of us have prepared for Halloween with bags of candy for the trick-or-treaters. In fact, a quarter of the candy sold annually in the United States is purchased for Halloween. There was also lots of candy thrown along the Homecoming parade route Saturday. Most of us don't think much about candy-making, because it is so easy to purchase it. During the 19th and 20th centuries, commercial candy was mostly made in the winter because cooking temperatures must be high and humidity in the summertime prevents the candy from setting up properly.

The actor Vincent Price grew up in St. Louis. His grandfather had been trained as a doctor but found his fortune when he invented Dr. Price's Phosphate Baking Powder. It was basically the same chemical combination that is used today to help leaven baked products. After many expansions in the company, the elder Price sold the business. By 1902, his son, Vincent L. Price — the actor's dad — managed to build the National Candy Co. by convincing candy-makers to merge into one corporation with headquarters in St. Louis. This put the company in place to churn out wagonloads of sweets for the 1904 World's Fair. Groceries, soda fountains, dime stores and other merchants were soon carrying delicious sweets that were made and shipped from St. Louis. Penny candy and nickel candy bars were popular everywhere. The actor Vincent Price and his siblings had their share. He said he grew up eating candy all the time.
