When making candy how do you keep the candy from getting hard in the pan after cooking it?
Question: I made some candy yesterday and it was in the softball stage and aftr a few minutes the candy in he pan got hard.
How do i keep it soft while taking it out of the pan.
I didn't have any corn syrup in it . I just made it with sugar and water.
Answer: Remove it immediately when it gets to the soft stage. Also, you probably needed some corn syrup to help it come together.
You need to get it out of the pan rightt away. Most candies will also call for butter, corn syrup etc.
