Milk “soured” with white vinegar is usually just a replacement for buttermilk (which you may not have on hand). I have not made frosting with buttermilk, but I’m sure it’s delicious. When I don’t have needed buttermilk on hand, I have soured milk with lemon juice OR vinegar…and let it sit for a bit to sour, then it works great. Most frostings don’t require sour milk (or buttermilk). Here’s a recipe I have that does: Jen answers:

This buttercream can be made with milk, semisweet, or bittersweet chocolate. Cool chocolate between 85-100 degrees before adding it to the butter mixture. The buttercream can be made 3 hours in advance.

For longer storage, refrigerate the buttercream, covered, and let it stand at room temperature for 1 hour before using.
