Before you go running for the hills at the mention of a veggie burger, at least taste this one before you make any judgments.

CAN YOU imagine that a book with recipes that don’t contain dairy, sugar or wheat, vaporised out of my ‘in tray’ in double quick time a few weeks ago and hasn’t been seen since?

Annoying as that may be, this is definitely a compliment to the authors of Guilt Free Gourmet and of course indicates a growing demand for ‘free from’ recipes — the biggest growth area in food.

I particularly wanted to browse through the book because it was written by a recent graduate of the Ballymaloe Cookery School. Jordan Bourke did a 12 Week Certificate Course with us here in April 2010.

He was ‘properly’ interested in food and flavour and super fresh produce.

Mixed berry buttermilk pikelets | a splash of vanilla

Sift flour and sugar into a mixing bowl.  Set aside.  Whisk the buttermilk, milk, butter and egg together in a jug.

Add the buttermilk mixture to the flour mixture and stir until smooth – you might need a bit more milk to thin out the batter if it’s too thick.  Add the berries to the mixture – if you’re using frozen berries, stir them through very gently and slowly with a spatula or wooden spoon so they don’t get mushy and colour the batter.  I find it best to leave the frozen berries in the freezer until just before I use them.

Heat a large non-stick frying pan over medium heat.  Brush with a little butter.   Spoon heaped tablespoons of the mixture into the pan.  Cook for about 2-3 minutes on one side (or until bubbles show on the surface), flip over and cook for a further 2 minutes or until browned and cooked through.

I had to turn the heat down so they didn’t burn.  You’ll also need to lightly grease the pan with butter in between each batch....

MIU 2-Piece Plastic Mixing Jug Set Review Ever so much better than a regular glass mixing bowl. These are ideal when using a hand mixer and you do not want to splatter your batter all over the place! You can pour from it and also rotate the lid closed to store something in fridge. I absolutely love its light weight, plus the handle makes it easy to move, hold, etc. The measurement-markings on the outside wear off easily but I never used them anyway. My original one from years ago (just the large size; didn't come with smaller one back then) is still going strong but bought an extra, just in case, and the smaller one is a great bonus!
