Roll it out gradually, allowing it a chance to rest for a moment before continuing. This makes rolling easier, and guarantees the dough won’t shrink in the pan during pre-baking. Pre-baking the shell, also called blind baking, ensures the pastry won’t go soggy from the filling. If you are lining a 9 ½-inch tart pan, you will need a 12-inch circle of dough. Lay the dough loosely into the pan, letting it relax a bit. Fold the overlap around the perimeter to make a double thickness, then press firmly against the pan so the finished edge is slightly higher than the pan. If possible, refrigerate or freeze the pressed-in dough for an hour before pre-baking.
Bake for 10 to 15 minutes at 375 degrees, until lightly browned. Some cooks like to use pie weights for blind baking, but a poke with a wooden spoon is the method I prefer. Check the tart shell frequently during the first few minutes. If the bottom is puffing up, push down with the spoon to deflate. Should the edges begin to flop down, press them back with the spoon. Cool the pre-baked shell completely (you can pre-bake it several hours ahead if you wish).
