What does a chef, who is used to cooking beef tenderloin and upscale chicken and seafood dishes, do when a customer wants an appetizer party for 40 people of only vegan food?
Vegan, mind you, means no animal products whatsoever. No meat, fish, eggs or dairy. No honey or gelatin or mayonnaise.
Chef Doug Rennie of Just Rennie's got excited and started experimenting.
"The person who's hosting the party went from being a meat eater to a vegetarian to vegan," said Rennie. "Not everybody at the party is a vegan, but she says she feels healthier and has more energy and wants to spread the word."
From the chef's perspective, some animal products are harder to substitute for than others. Eggs, in particular, are needed in many preparations to stick ingredients together in their raw state (think salmon patties) and then firm up during cooking. Xanthan gum is often used to help with this in vegan recipes.
Other items can be replaced easily enough with soy milk, coconut milk, almond milk or vegan products made with soy to resemble the originals such as mayonnaise, cream cheese, sour cream, cheddar cheese, even sausage and meat.
